Whole reading this I kept thinking "what about dB migrations" and when I reached the end I was a bit disappointed. How do you really handle those?
As for docker, as someone who picked it up fairly recently (~3 yes ago), I think it will be useful for you during development and testing, but given your current deployment setup I think looking at ansible first might be a better time investment at this point.
